Another full on day today, starting with no bread left for toast, so I made some American Pancakes
we had them with some left over cream and maple syrup
The recipe I use is really easy,

135g/4¾oz plain flour1 tsp baking powder½ tsp salt2 tbsp caster sugar130ml/4½fl oz milk1 large egg, lightly beaten2 tbsp melted butter (allowed to cool slightly)
- Sift the flour, baking powder, salt and caster
sugar into a large bowl. In a separate bowl or jug, lightly whisk
together the milk and egg, then whisk in the melted butter.
Pour the milk mixture into the flour mixture and, using a fork, beat until you have a smooth batter. Any lumps will soon disappear with a little mixing. Let the batter stand for a few minutes.
Heat a non-stick frying pan over a medium heat and add a knob of butter. When it's melted, add a ladle of batter (or two if your frying pan is big enough to cook two pancakes at the same time). It will seem very thick but this is how it should be. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen to about 1cm (½in) thick.
Repeat until all the batter is used up.

I also had a go at making a loaf of bread in the Rayburn, came out great and tasted great, something I will be doing time and again. Its lovely to get back to baking again.
Last night I was sitting on the grass chatting to neighbours and I got stung on the back of my knee by a masonry bee, it went up my trouser leg, Today it has been very swollen and painful, the redness has spread to the the top of my thigh and down my calf, I have never had such a bad reaction to a sting.
Got some more done on the greenhouse today, its been scrubbed down and the membrane has been laid, the whole frame has been pegged down, we have started putting in the glazing panels some of them are broken so we have to find some-where to get some from, considering it was an old abandoned greenhouse in the hedge its shaping up nicely.
Another day draws to a close and its now time to get some shut eye.
I am imagining that American pancakes are what I call Scotch pancakes? Or is there a difference? I last made them 54 years ago in a school cookery class! Will follow your recipe and hope I have improved.

American pancakes are light and fluffy, scotch pancakes use a slightly diffrent mix they are a bit firmer.

DeleteI much prefer American pancakes to other varieties, it must be the maple syrup I think. Poor you with that nasty sting, I hope you recover enough soon.

DeleteI just found your blog and have read it from the beginning. What an adventure you are on. I look forward to following along as you became self sufficient. We used to have pancakes quite often but we got an electric waffle maker a couple of years ago and we enjoy them much better. In N. America pancakes are usually served with butter and a selection of syrups. I hope your leg has recovered from your sting!
